I was wondering, They re-made the original Enterprise but not the one with archer, Why not re-make all of the Movies, Except Voyager?

Just imagine the budget for something like that. You mean remake all of the star trek series into movies? Not only would that take a long time but people simply don't have the cash for something like that.

The ideas for Enterprise need to be very restricted to keep the timeline running smoothly throughout all of the series. So a movie would need to have an idea that has not even been alluded to in The Original Series, Next Generation, DS9, etc. So, Enterprise is about 40 years too late.

In order to be fully canon, it would have to utilize major events from Star Trek: First Contact and the novel Star Trek: Federation.
I would love to see Federation in film. The way it describes early interstellar flight as well as WW3 is very charming.

Now that you mention it, It would be interesting to see world war 3 and the first interstellar travel was in first contact.

The Romulan Wars would probably be the natural choice for an Enterprise movie (I was so hoping we were going to get to see at least the beginning to that in the series)

No. Because if the Romulans got to close to conquering Earth, the Ancients would have manifested Aurora-class warships blown them back to Romulus.

Somehow, I doubt they'd do a crossover. And, honestly, I don't see why the Ancients are seen to be so uber. Half the stuff they made, they couldn't even get to work, and the rest was overwhelmed through sheer weight of numbers. Now the Ori, on the other hand...
I think some of the early TOS episodes did cover the Romulan Wars...

Not really, the neutral zone had already been established and they said the wars was about 50 or 100 years ago.
The Romulan Wars was also pre-Enterprise era if I remember correctly, as I recall from Star Trek: Legacy.

A lot of things they couldn't finish failed because they either ascended first or because the technology itself did its job too well. (Like the Attero device). And did you see what that one Ancient girl did to that Wraith fleet?

Didn't most of them ascend artificially?
There are 2 or 3 ways to ascend- with technology, 100% brain use, or if somebody else ascended ascends a person (Daniel Jackson with that crazy chick).

And keep in mind that Ascended Ancients couldn't care less about the mortal world and would let the Romulans invade.
